1. How to Cook

I’m excited to share these with you guys!! Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. It’s not that I don’t love a savory breakfast recipe, because I do. It’s more that I enjoy sweet breakfast recipes in the morning and savory eggs for lunch or dinner…but that’s just me! Anyway, the point is, I rarely share savory breakfast recipes, so I’m overly excited to share these.

2. Easy recipe

How cute are these recipes? When I set out to make these, I really wasn’t sure how they would turn out. But I ended up loving the recipe! Sometimes I go into a recipe very unsure about it. But it’s the best when I’m presently surprised by the outcome…just love when that happens! And, these cakes couldn’t be easier to make or more delicious.



Main ingredients


  • 2 cups flour (cake or all-purpose)
  • 1 cup plain yogurt
  • 1 & 1/2 cups white sugar
  • 1/2 cup vegetable oil
  • 3/4 cup cocoa powder
  • 2 eggs
  • 1 tsp vanilla essence
  • 1 tsp coffee powder
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp salt
  • 1/3 cup choc chips or chopped chocolate

Instructions


  1. In a large bowl add flour, cocoa powder, coffee powder, salt, baking powder, and bicarbonate of soda then whisk well.
  2. In another large bowl add oil and sugar then mix. Add vanilla then mix in one egg at a time. Finally, add yoghurt then mix.
  3. Sift the dry ingredients into the wet mixture. Mix until all the ingredients are well combined. Please DO NOT over-mix.
  4. Cover the bowl and let the batter (mixture) chill in the refrigerator for 30 minutes. Please don’t skip this stage.
  5. Scoop the batter into a prepared muffin tray. This is a thick mixture, so make sure the muffin tray is fully filled.
  6. Add chocolate chips or chopped chocolate on top.
  7. Bake in a preheated oven at  180 Degrees Celsius for 18-20 minutes.
