1. How to Cook

I’m excited to share these with you guys!! Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. It’s not that I don’t love a savory breakfast recipe, because I do. It’s more that I enjoy sweet breakfast recipes in the morning and savory eggs for lunch or dinner…but that’s just me! Anyway, the point is, I rarely share savory breakfast recipes, so I’m overly excited to share these.

2. Easy recipe

How cute are these recipes? When I set out to make these, I really wasn’t sure how they would turn out. But I ended up loving the recipe! Sometimes I go into a recipe very unsure about it. But it’s the best when I’m presently surprised by the outcome…just love when that happens! And, these cakes couldn’t be easier to make or more delicious.



Main ingredients


  • 2 & 1/2 cups flour (cake or all-purpose)
  • 1 & 1/2 cups white sugar
  • 3/4 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 Tbsp cocoa powder
  • 1 tsp bicarbonate of soda
  • 3 tsp vanilla essence
  • 2 tsp white vinegar
  • 1/2 tsp salt
  • 1 Tbsp red food colouring (or more, depending on the type you are using)

Instructions


  1. In a large bowl mix sugar and oil. Then add vanilla and mix one egg at a time. Mix well.
  2. Add buttermilk. Mix, then add red food colouring. Mix. Sift in flour, bicarbonate of soda, cocoa powder, and salt. Mix until all ingredients are well combined.
  3. Add white vinegar then gently mix.
  4. Line 2 cake pans with parchment paper and grease the sides with butter or oil. Divide the batter (mixture) equally in the two pans. My cake tins are 8 inches.
  5. Bake in a preheated oven at 160 Degrees Celsius for 40 minutes or until well baked( depending on your oven).
  6. Let the cakes cool off completely before you frost it. 

* When leveling the cake, cut the top part and use it to decorate the cake (make it into crumbles).

It can be decorated with additional red velvet cake crumbs, fresh berries, chocolate shavings, or any other creative toppings.

Though it’s a beloved treat, it’s essential to note that the use of food coloring in the cake means that it may not be suitable for everyone, especially those with sensitivities to food dyes. Some recipes use natural alternatives like beetroot extract to achieve the red color.

The classic chocolate chip cookie can do no wrong and only makes life better, happier…and much more satisfying. I know you know what I’m talking about, cookies are just GOOD. I’m not sure why, but I’ve really been on a HUGE cookie kick this year. Maybe it’s because most are easy to make. Or maybe it’s because cookies bring back the best memories for me.

Ingredients

  • FROSTING

  • 1 cup cold whipping cream or heavy cream

  • 1/2 cup icing sugar

  • 1 tsp vanilla essence

Instructions

In a large bowl mix sugar and oil. Then add vanilla and mix one egg at a time. Mix well.

Add buttermilk. Mix, then add red food colouring. Mix. Sift in flour, bicarbonate of soda, cocoa powder, and salt. Mix until all ingredients are well combined.

Add white vinegar then gently mix.

Line 2 cake pans with parchment paper and grease the sides with butter or oil. Divide the batter (mixture) equally in the two pans. My cake tins are 8 inches. I used two square baking pans for this recipe.

Bake in a preheated oven at 160 Degrees Celsius for 40 minutes or until well baked( depending on your oven).

Let the cakes cool off completely before you frost it. FROSTING Add all the three ingredients in a large bowl .Beat until you get a thick consistency. Now you can assemble the cake and frost it however you prefer.

Notes

*All the ingredients should be at room temperature. Don’t use cold ingredients. * I ONLY use gel food colouring.
